By following these simple steps, you’ll enjoy juicy cooked chicken breasts right out of your oven every time.

CHICKEN CHICKEN Start by using a heavy rolling pin or meat mallet to pound your chicken breast to an even thickness.

SEASON Season generously with my special seasoning blend (in the recipe card below).

BAKE/ROAST Bake for just 20 minutes at 425 degrees F, then let rest for 5 minutes under foil before slicing.

The natural shape of a chicken breast is a teardrop, with a thicker, meatier part at the bottom of the teardrop. Chicken should be cooked to 165 degrees F before it is safe to eat. If you don’t mash the chicken, the thicker part will take longer to cook to safe temperature, while the thinner part of the chicken breast will overcook and result in a dried out, stuffy chicken breast.

This method also applies to chicken that needs to be grilled, and even chicken that you are going to cook on the stovetop.

I spent many, many years perfecting my favorite chicken seasoning. It’s both sweet and smoky, without being overpowering. The simple yet complex flavors blend together perfectly and are great served with any side dish you serve with your baked chicken.

Chicken Seasoning Ingredients

Here’s what you’ll need to make your baked chicken taste like a million bucks!

  • brown sugar – the sugar helps tenderize the chicken, believe me, it’s a good idea.
  • chili powder – adds a delicious smoky flavor and gives a nice color to the chicken
  • Parsley – great for adding a balanced weed flavor
  • Salt – the seasoning of life
  • Pepper – because it goes with salt
  • garlic powder – adds delicious flavor
  • onion powder – complements garlic powder
  • Cumin – it really gives something special to the chicken

Mix the spices together and rub the chicken breast generously before cooking.

PRO TIP: I will usually double or triple the seasoning mix and store any excess in a zip lock bag for the next time I cook chicken.

How long to cook chicken breasts in the oven?

Since we’re not going to sear the chicken in a skillet before finishing it in the oven, you’ll want to start your chicken on high in the oven.

Make sure your oven is preheated to 425 degrees F before cooking. Cooking on high will help lock in those juices, resulting in tender, juicy chicken every time.

Chicken breast size

  • 4 to 6 ounces of chicken breasts – 18 minutes
  • 7 to 8 ounces of chicken breasts – 20 minutes
  • 9 ounces and over – 22 minutes

Remember to use a instant read meat thermometer to check for an internal temperature of 165 degrees F.

How long to “rest” a chicken breast

One of the biggest rookie mistakes when cooking chicken is slicing it immediately after cooking. Chicken breast is a muscle and what happens to a muscle when it is cooked? it tightens! If you cut the chicken right away, it will be tough and chewy, and all the juices you worked so hard for will immediately run out…resulting in a dry, tough chicken.

Leave the chicken breasts rest for 5 minutes under a sheet of aluminum foil before slicing.

When the chicken comes out of the oven (or even off the grill or pan), let it rest under a sheet of aluminum foil for about 5 minutes. This will allow that muscle to relax, giving the juices inside the chicken a chance to redistribute everywhere, and you’ll end up with the most glorious, juiciest chicken you’ve ever had.

  • Preheat oven to 425 degrees F. Line a baking sheet with foil and spray with nonstick spray.

  • Place the chicken breasts between two sheets of parchment paper and flatten them to an even thickness. Drizzle both sides of the chicken with olive oil.

  • Mix seasonings and sprinkle generously on both sides of chicken breasts. Bake for 20 minutes. Remove from oven and cover loosely with foil for 5 minutes before slicing. Enjoy!

If your chicken breasts are smaller, reduce the cooking time to 18 minutes. If the chicken breasts are larger, increase the cooking time to 22 minutes.
Be sure to check that the internal temperature reaches 165 degrees.
